The elderberry plant is used in many forms. The berries and flowers are used to make an assortment of drinks, syrups, flavorings, jams, marmalade, relishes, desserts and more. Most elderberry varieties should be cooked before eating, as fresh plants and berries can be toxic. Once cooked, they are not only pleasing to eat, but also useful medicinally. Check next season for availability.
